 God’s own country beckons at the Taj! This time round at the Taj Coromandel, to savour the fascinating flavours of maplah cuisine at the Southern Spice. Maplahs or the Malayalee-speaking Muslims, are known for their cuisine - rich, elaborate and delectably enticing. The 10-day food promo called Magic of the Maplahs begins August 1, 2003 and is on for both, lunch and dinner.
P K Mohankumar, General Manager, Taj Coromandel, said, “As the finest hotel in the city, it is our endeavour to showcase cuisine that is both domestic and international in flavor. It is through food promotions and food festivals at our various outlets, that we aim to showcase the authentic cuisine of various places. In the process, we offer our guests and patrons not just variety but a delightful and fine dining experience as well. Maplah cuisine is considered a definite highlight of Kerala cuisine. In this promotion, we would showcase numerous signature maplah recipes. And being the first of its kind, we are hopeful of a very encouraging response.”
Maplahs are descendants from the Arab region, who married local Kerala women. Given this, the Arab influence on the cuisine is only but natural. Chefs have been flown down from the Taj properties in Kerala to cull the exclusive Malabar specialities. Alisa, pathiri, neichoru, mutta mala, mutta appam, pazham porichathu and numerous other wedding special recipes feature in the special ethnic menu. And to lend a dash of color to the festival, guests can get their hands decorated in mailanchi (mehendi) or learn more about what’s on the cards for them through a tarot card reader, at the restaurant.
