Potato-onion roast
 |
Remember the thokku we made in a hurry last week? Now let us see how to make this simple roast that goes well with that curry. |
|
Ingredients:
-
Potatoes - 3 (evenly-sized)
-
Onion - 1 (medium-sized)
-
Chilli powder - 1 tsp
-
Turmeric powder - 1/2 tsp
-
Salt - To taste
-
Mustard - 1/2 tsp (for seasoning)
-
Broken black gram - 1/2 tsp
-
Cooking oil - As required
-
Asafoetida - 1 pinch
|
Method:
Cut potatoes into four pieces and you can boil them in a separate vessel or along with the rice you cook in a pressure cooker. Chop the onion into fine pieces. Peel the skin off the potatoes and keep them aside. Heat oil in a heavy-bottomed pan and add mustard, broken black gram (uluthamparuppu) and asafoetida. When the mustard splutters and the black gram turns golden, add the boiled potato pieces. Add the chopped onion and fry well. After a few minutes, add turmeric powder, chilli powder and salt.
Keep turning the mixture for a few minutes more and your potato-onion roast is ready.
This is very easy to prepare and takes very little time to make.
