Punjabi Khana

Daal Makhani or Paneer Butter Masala are just two of her many such delicious Punjabi preparations. The aroma of the delicacies just prepared, engulfs the air when you enter her residence at Valmiki Nagar. Afterall, isn’t a good meal the best way to winning a heart? Sangeeta Talwar has specialised in North Indian cuisine, and especially Punjabi khana is her favourite.

Sangeeta does not stop with cooking. The idea of passing on her culinary skills occurred to her when she started catering Punjabi food to some of her friends who really relished them. Encouraged by her neighbours, she has begun her cookery classes and is at present engaged in teaching housewives and students as to how to prepare authentic Punjabi Khana.

Different types of breads like Tandoori or Rumali rotis, Phulkhas, Parathas and side dishes like Daal, Malai Kofta, Paneer Butter Masala, Palak Paneer and the like – which one would have enjoyed in hotels and parties, - now her students are made to learn in a homely atmosphere. A strict adherent to quality, Sangeeta insists on quality ingredients, fresh vegetables and an attractive presentation. She actually makes her wards do the food items themselves to get a ‘hands on’ experience.

Basically a fashion designer, she loved cooking always, she says. Sangeeta had also done ‘summer courses’ in cooking when she was in Delhi from the chefs of the Taj, Delhi. Besides that, being a niece of the AGM of Delhi’s Ashoka Hotel also gave her plenty of opportunity to learn culinary skills.

"Presenting your preparations in an attractive way is most important. First impression is the looks, that kindles your appetite," says she and so she also teaches different ways of presentations. While teaching how to prepare good food, she also gives some ‘under hand tricks’ that will help to set right the damage if anything goes wrong during preparation. Giving some finer tips here and there, Sangeeta helps them to get the right amount of perfection. On Sundays the classes are exclusively for the employed. Sangeeta has been going slow on her catering till the end of May, when her classes will be over.
