Ingredients
1/2 -3/4 cup of vegetables. like raw plantain, carrot, beans, peas, potato, drumstick, yam.( of your choice, but more the variety, tastier the avial)
1 cup curd
1 cup fresh grated coconut
1 1/2 tsp cumin seeds
Green chillies (as per spice reqd.)
Salt (as per taste)
2 tsp. raw rice soaked in water
3-4 tbsp coconut oil
A few sprigs of curry leaves.
Method:
Cut all the vegetables into even sized, 2" pieces. Pressure cook all the cut vegetables together, with sufficient amount of water directly in the cooker body, till 2 whistles are heard.
Make a paste of the coconut, cumin seeds, green chillies, soaked rice and salt. When the vegetables are cooked, remove the excess water and retain just little.
Add the ground paste. And cook on a medium flame till the raw smell is lost. Add the curd and mix well.
Add the curry leaves. And switch off the flame. Heat the coconut oil till warm and add on top of the avial. Keep it covered for sometime.
