Mushroom Mania
This delectable fungi is steadily gaining in popularity among Indians. Its adaptable nature, undoubtedly fabulous taste and high nutritional value are all contributing towards mushroom becoming a hot favourite among both vegetarians and non-vegetarians.
Here are some ways you could include the mushroom in your everyday diet.

Mushroom Soup

Ingredients-

- Mushroom-150gm (sliced).
- 1 small onion finely chopped.
- Salt and pepper- to taste.
- ¼ tsp cinnamon powder.
- Cream-2tbsp.
- Butter-2 tsp
- Chicken /vegetable stock-2 cups.
- 2tsp corn flour (make a solution using about 2tbsp of water).

Method

Melt the butter in a wok. Make sure that it does not burn. Sauté the onions in the butter. When the onions become translucent, add in the mushrooms and sauté till slightly tender. Then add in the stock, cinnamon powder salt and pepper and boil over a low flame. Then add in the corn flour mixture and simmer till soup reaches a desired consistency. Pour into soup bowls. Garnish with cream and serve hot.

Mushroom
Masala

Ingredients

Mushroom-200 gms (halved).

Onion 1, finely chopped.

Ginger garlic paste-2tsp.
-
Curd-2tbsp.
-
Garam masala powder-1tsp.
-
Ghee-2tbsp.
-
Chilli powder-1tsp.
-
Sugar-1/4tsp.
-
Water-1/2 cup.

Heat ghee in a wok. Put in the onions and fry till golden brown. Remove from the ghee and make a paste . Keep it aside. Add the ginger garlic paste to the remaining ghee and sauté till the raw smell disappears. Then add in the chili powder and the sugar and sauté for a while. When you feel that the masala is about to stick to the pan, add in the curd. Mix the curd well and the add in the mushrooms. After a few minutes add in the brown onion paste and garam masala powder. Cook over a very low flame for a while. Then pour in the water and let it simmer, till you have a nice thick gravy. |

diced.

1 potato
diced.

Beans (a
few) chopped.

Cauliflower-a
few florets.

Tomato 1
large (chopped).

Onion 2
diced.

Mushrooms-100
gms (halved).

Coriander
leaves (finely chopped)2 tbsp.

Jeera
powder-1 tsp.
-
Tomato
sauce-1 tbsp.
-
2 green
chillies slit.
-
Salt to
taste.

Oil 2-3
tbsp.

Heat oil in a wok. Add in the green chillies. As soon as they splutter add in all the vegetables (except tomato) and the mushrooms. Mix well and cover and cook over a low flame. When you find that the veggies are almost tender, add in the tomatoes and salt. Mix well and cook over a low flame. When the veggies and mushrooms are done add in the tomato sauce, jeera powder and half the coriander leaves and mix well. Cook till you feel the veggies are sticking to the pan. Remove and garnish with the remaining coriander leaves. Goes very well with chapattis or parathas. |
