Party delights
The party season is just beginning. Everybody is in a mood to celebrate. What better way to do this than spend quality time in the company of good friends and savouring excellent food? So, here we go. Some easy-to-make party snacks for you.

Bird’s nest

Ingredients-

- 1 large potato boiled and mashed
- Butter-1\2 tbsp
- 0il-for deep frying
- 1 slice of bread
- 1 small onion finely chopped
- Peas-1/2 cup (shelled and boiled)
- 1 egg-hard boiled
- Breadcrumbs
- Salt and pepper to taste

Method

Tear the slice of bread into tiny bits and mix well with the mashed potatoes. Add a little salt. Now divide the mixture into 4 equal balls. Coat the balls in breadcrumbs and deep fry. Then cut each ball into half and make a deep hole at the centre. Meanwhile, heat the butter in a pan. Saute the boiled peas and chopped onions till nice and glossy. Add a little salt and pepper. Grate the hard-boiled egg. Now fill the hole at the centre of the potato chops with the pea filling. Garnish with some grated eggs. Your bird’s nest is ready.

Cabbage and cheese rolls

| Method |
|
Mix the baking powder, maida, onion, salt and pepper into the shredded cabbage. Lightly beat the egg. Add enough egg to the mixture to make a pliable dough. Make four equal balls using the dough. Now flatten the ball on the palm of your hand. Put a cheese strip at the centre and roll up the flattened cabbage ball to form fingers. Fry the rolls till light golden brown. Serve hot with ketchup. |

Chicken chaat

2 cups chicken (boiled and shredded)

1 potato boiled and chopped

1 onion sliced

Curd-2 cups

Chaat
masala-as required
-
Chopped coriander leaves-1/4 cup

Method
|
|
On a dish, spread out some shredded chicken. On top of it, spread out some potatoes. Sprinkle some onions over this. Pour beaten curd over the whole thing. Sprinkle some chaat masala. Garnish with chopped coriander leaves.
