The Indian palate is now beginning to appreciate the textures and flavours of cheese in a big way. Actually, this milk product can add class to any normal, everyday recipe, lifting the mundane to the status of culinary delicacy. Here are some simple, easy to make, cheesy delights for you.

 

Cheese sticks

Ingredients-

  • Mida-1 cup
  • Grated cheese-11/2 cups
  • Salt and pepper-to taste
  • Butter-1/2 cup
  • Baking soda-1 tsp
  • Egg white-1
  • Milk-1/4 cup

Method

Sift the flour and baking powder along with the required amount of salt and pepper. Now rub in the butter to form a crumbly mixture. Then add the cheese and mix (lightly). Beat the egg white and add a little milk (about 2 tsp of milk to it). Use this mixture to make a smooth dough. Rest the dough for about half-an-hour. Now roll it out on a floured surface (about 2 inch thick) and cut into strips, the size of your fingers. Bake in a pre-heated oven for about 10-15 minutes. 

 

Baked Cauliflower with cheese

Ingredients

  • A medium-sized cauliflower

  • Hung curd-1/4 cup

  • Ginger garlic paste-2 tsp

  • Garam masala powder-1 tsp

  • Salt to taste

  • Red chilly powder-2 tsp

  • Grated cheese-1/2 cup

Method

Wash the cauliflower thoroughly. Soaking it in warm salted water for a while is a good idea. Put the curd in a bowl and all the masalas and salt and beat well. Now spread this masala on the cauliflower and marinate for about an hour. Prick the top of the vegetable with a fork, to allow the marinade to sink in. Sprinkle the grated cheese on top and bake in a moderately heated oven for about half an hour. Sometimes you may require a little more time. So check with a fork to see that the vegetable is tender. Serve hot with chapattis or parathas.

 

Potatoes stuffed with cheese

Ingredients

  • Medium-sized potatoes-6

  • Grated cheese-1/2 cup

  • Salt and pepper-to taste

  • Chopped capsicum-2 tbsp

  • Chopped onion-2tbsp

  • Chopped tomatoes-4 tbsp

  • Chopped garlic- tsp

  • Butter-1 tbsp

Method

Boil the potatoes (do not over boil). Remove the jacket and scoop the inside. Melt the butter in a pan. Saute the onions. When translucent, add in the garlic. When the raw garlic smell has gone, add in the capsicum and mashed potato (2 tbsp), and tomatoes and cook well. Add in salt and pepper. Remove from flame and mix the cheese. Fill in the potatoes with this mixture. Seal the top with the slice you had cut in order to scoop. Use a toothpick to keep the lid in place. Now grease a baking tray and bake in a pre-heated oven for 15 minutes or till golden brown. Makes an excellent and wholesome snack.
