Egg-Cheese Puffs

Ingredients 

Eggs - 4
Coconut grated - ½ cup
Green chillies - 4-6
Shah jeera - ½ tsp
Onions - 2 medium
Tomatoes - 2 large
Ginger - 1 small piece
Garlic - 2 cloves
Turmeric powder - ¼ tsp
Coriander powder - ¼ tsp
Jeera powder - ¼ tsp
Kashmiri chilli powder - ½ tsp
Garam masala - ½ tsp
Coriander leaves - 1 large handful
Curry leaves
Mustard seeds
Salt
Oil

Method:

Sift maida and soda-bi-carb into a bowl. Beat eggs till frothy, and add to the flour, along with the milk. Add chopped onions, chillies, coriander leaves salt and pepper and mix to a thick batter, adding more milk, or water, if necessary. Lastly stir in the grated cheese. Heat oil till smoking point, and pour in small spoonfuls of the prepared batter. When the batter puffs up and turns golden, remove with a slotted spoon, drain on absorbent paper and serve hot with tomato sauce. 

Variations: Add ½ cup of tomatoes chopped fine OR ½ cup of finely chopped cauliflower OR ½ cup of chopped capsicum OR ½ cup of chopped, cooked mushrooms to the batter.
