Ingredients
1 tablespoon of oil
4 cloves garlic
¾ -1 teaspoon of mixed herbs *
400 grams mushrooms, sliced length wise
2 teaspoons of flour (optional)
Juice of ½ lemon
Salt to taste
Generous sprinkling of pepper
Method:
Put oil in a microwave safe dish and preheat it for 2 minutes at 100% power. Drop in the garlic and herbs and continue to cook at the same level for 2 minutes more. The mixture should become very fragrant.
Remember mushrooms need to be washed very quickly or just wiped with a damp cloth, never left to soak in water. Microwave covered at 100% power for 3 minutes. Stir, take off cover and continue to cook another minute. At this point you will see that the vegetable has exuded moisture and you have a thin gravy. If you wish it to be thicker, sprinkle over the flour and microwave at the same level for another 30 seconds. Leave to stand 3-4 minutes.
Just before serving, add salt, stir in the lemon juice and a generous amount of freshly ground pepper.
*This could be a mixture of dried oregano, mint, sage, thyme. If you prefer you could instead use an ethnic spic-ground coriander, cumin, a pinch garam
masala, or any other mixed spice powder. For a colourful variation, stir in a few teaspoons
fresh coriander along with the lemon juice.
