Rich Mutton Curry

Food


Ingredients 

Mutton - 500 gm, cubed
Onions - 2, medium
Yogurt - 5 tbsp.
Fresh ginger pulped - 1 tsp.
Fresh garlic pulped -1 tsp.
Chilli powder - 1 tsp.
Turmeric - 1 pinch
Garam masala - ½ tsp.
Cardamoms - 2 nos.
Black cumin seeds - 1 tsp.
Poppy seeds - 1 tbsp.
Til seeds - 1 tbsp.
Ground almonds (or cashew nuts) - 2 oz
Green chilles - 6 nos.
Dessicated coconut - 1 tbsp.
Fresh coriander leaves
Salt to taste
Oil to cook.

Method:

Chop onions and keep aside. Marinate meat with yogurt, garlic, ginger, chilli powder, garam masala, chopped green chillies, turmeric powder, salt and black cumin seeds for 1-2 hrs.

Roast ground almonds or cashewnuts, dessicated coconut, poppy and til seeds and cardamoms until golden brown, and grind to a fine paste. Add to meat mixture and blend well.

Heat a little oil in a pan, fry chopped onions till golden, and remove. Add meat to oil, and stir-fry for five minutes. Return onions to pan and fry for another five minutes. Add sufficient water and cook covered over low flame till meat is tender and the gravy thick. 

Serve garnished with coriander leaves. Goes well with both roti and pulao.
