Ingredients
4 medium-sized baking potatoes
2 tbsp olive oil
1 tbsp Cajun spice seasoning
100g (4oz) cheese
4 spring onions
Method
1. Preheat the oven to 240°C/475°F. Scrub the potatoes and then cut into wedges about 1cm (1/2 inch) thick. Place in a clean plastic bag and add the oil and spice seasoning. Seal and shake well to mix.
2. Tip out on to a large baking sheet lined with baking parchment and space out evenly. Bake for 25 minutes, turning halfway through, until tender and golden.
3. Meanwhile, finely grate the cheese. Trim and chop the spring onions. Cover and chill until required.
4. To serve, pile some wedges on to warmed serving plates and sprinkle each portion with a little cheese and a few spring onions.
