Ingredients:
1 tablespoon oil
1 teaspoon cumin seeds
3 onions, ringed
4 tablespoons tomato puree
4 tablespoons garlic-chilli or tomato sauce
Salt, pepper and red chilli powder to taste
400 grams cottage cheese (paneer), cubed
2 capsicums, sliced in sticks.
Method:
Put the oil in a microwave-safe dish and preheat at 100% power for 3 minutes. Drop in the cumin. Continue to cook at the same level for 2 minutes. Add the onions. Microwave for 4 minutes more, stirring once. Add the puree, sauce, seasoning and cheese. Stir and microwave covered at the same level for 4 minutes or till most of the moisture evaporates. Exact cooking timings will naturally depend on the moisture content of the paneer. Just before serving, arrange the capsicum over the paneer and cook covered another 2 minutes. A sprinkle of garam masala over the top works well too.
