Ingredients
Mint leaves (finely chopped) - 1 tbs.
Coriander leaves (finely chopped) - 1 tbsp.
Ginger-Garlic paste - 1 tbsp.
Chole/Channa masala powder - 2 tsps.
Saunf - 1/2 tsp
Green Chillies (slit) - 2
Salt to taste
Leftover Parathas/Nans/Pulkas/Maida Dosas - 10
Carrot (chopped into fine match-stick size) - 1/2 cup
Beans (chopped into fine match-stick size) - 1/2 cup
Cabbage (shredded) - 1/2 cup
Capsicum (chopped into fine match-stick size) - 1/2 cup
Onions (finely chopped) - 1/2 cup
Tomatoes (finely chopped) - 1/2 cup
Method:
Heat the oil in a kadai and add saunf. When it splutters, add green chillies, onions & mint leaves and fry till onions are translucent. Add ginger-garlic paste, chole masala powder and salt. Then add the carrots, beans and cabbage. Fry and cover with lid. Keep stirring
in between till the vegetables are half cooked. Now, add the capsicum and fry for a few minutes, till slightly cooked. Meanwhile, make the leftover
parathas into tiny bits. Add tomatoes to the vegetables and fry till the raw smell goes. Now, add the bits of
paratha and mix well
till evenly coated. Then remove from fire. If desired, add little chole masala powder on top and
garnish with chopped coriander leaves.
This is a very tasty dish which is ideal for evening snacks which could be made with
leftovers.( Sometimes, for taste you could make it fresh too)
