Ingredients
~ 5 curry leaves
~ 3 green chillies
~ 2 onions, finely chopped
~ 2 tomatoes, chopped (or 1 tsp of tamarind pulp)
~ 2 flakes garlic, finely chopped
~ 3 cups gram flour (besan)
~ 4 tbsps of oil
~ 3 tbsps coriander leaves
~ 1/2 tsp chilli powder
~ 1/2 tsp turmeric powder
~ 1/2 tsp mustard seeds
~ 1/2 tsp cumin seeds
~ Salt to taste
Method:
Dry roast the besan in a pan till it turns pink. Heat oil in a kadhai and add the mustard and cumin seeds. When they splutter add the green chillies, curry leaves, garlic and onions. Fry till golden brown. Add the tomatoes (or tamarind pulp). Now add the besan, chilli and turmeric powder, salt and a little water. Stir, with no lumps, till brown and fragrant. Garnish with coriander leaves and serve with bhakaris.
Note: Cooked drumsticks, methi leaves, other suitable vegetables may be added to zunka, if desired.
