Indian Cooking for Dummies

Neem flower pachadi
Ingredients

Fresh neem flower - 2 spoons
Tamarind - 1 small ball
Jaggery - 1 cup
Salt - 1 spoon
Mustard - 1 spoon
Red chillies - 1
Oil - A little

Method

Pour a little oil into the kadai and fry the neem flowers (veppam poo) till they turn golden brown. Powder the fried flowers and keep aside.

Squeeze out the tamarind juice and boil it with salt. Add the jaggery. Let it boil. Add the powdered veppam poo to the mixture and let it boil again. Remove from the stove.

If the mixture is watery, add some rice flour mixed in water.

Splutter mustard and the red chillies and add to the pachadi.

Note
Veppam poo pachadi is a must for the Tamil New Year Day when the flowers are available fresh. But the pachadi can be made even with dried flowers during the rest of the year. Some people powder the flower and add it to the manga pachadi.
