The word Texas conjures up images of the vast Wild West deserts
with tall cacti plants, cowboys armed with shotguns riding off
their majestic horses, rodeos and, of course, barbeque. Texans
love their BBQ and no visit to the Lone Star State will be
complete without a BBQ place. My personal favourite is the Goode
Company BBQ place on Kirby Drive in Houston. Try their baked
potatoes! It's worth dying for! There is something amazing as
you sit around the blazing flames with friends, the smell of
food cooking over coal lingering in the air and just laughing
and talking. It is one of my favourite ways to spend time with
friends. There is no necessity for major planning and cooking in
the kitchen this way. It is the kind of time you spend with
close friends. Comradeship, laughter and fun all the way!
And there is no better way to entertain
visitors to Texas than enjoy an evening of BBQed goodies. We
fire off the grill at our patio, throw in some veggie burgers,
tandoori chicken and paneer, veggies and let the smoky flavor
fill the house. Adding the Indian twist to the typical BBQ is
fun. A variety of condiments (mayo, mustard, ketchup, and salsa)
and fresh garden salad completes the meal. It is a fun way to
entertain without worries and enjoy an experience so unlike the
usual dining ones.
Of course, the BBQ is kind of similar to the
traditional cooking carried out in front of the house, mud pot
precariously balanced between three stones, wood and twigs
burning merrily, the black soot coating the bottom of the pot,
smoke rising! Those were some days. Some families continue that
tradition to thank the Sun God and welcome the new harvest on
Pongal but many like mine have discontinued that tradition and
opted for the convenience the gas stove offers, and BBQ takes
you back to the good old days!
Here’s the simple marinade I use for as my
marinade for paneer and chicken dishes: Yogurt, ginger-garlic
paste, salt, chili powder and some lemon juice in appropriate
proportions tossed well and stored in the fridge for 4-6 hours.
