Easy Kulfi

Ingredients:

  • 1/2 pint whipping cream
  • One 12 oz can fat-free evaporated milk
  • 1 can condensed milk
  • Pistachios and almonds chopped into fine pieces
  • Cardamom powder 1/2 spoon
  • Saffron few strands

Method:

Whip/beat the cream till it forms a nice foam. Slowly add the condensed milk, evaporated milk.
Add the cardamom powder, saffron strands mixed with one spoon of milk, pistas and almonds.
Mix nicely. Pour into kulfi moulds or any container of your choice.
Freeze for 3 hours.
Remove and mix nicely (to evenly spread the nuts).
Refreeze for another 1-3 hours.
Tasty kulfi ready.

Recipe: Chilled Palm Fruit Drink

Ingredients:

  • Cold milk (boiled and refrigerated)
  • Sugar or sugar syrup
  • Few drops of rose essence
  • Nungu - Palm fruit.

Method:

Shell out the outer skin and get ready the white fleshy fruit.
Cut into small pieces and mix in adequate quantity.
Serve chilled mixing all ingredients. 
A good summer chilled delight suitable to all people.

Prepare juice out of watermelon and add a few drops of lime juice and ginger extract, chill and serve with a dash of fresh cream.

Lunch Item

Use leftover rice. Let the rice be very soft, add buttermilk and salt to taste. Mix well and add enough water so that it comes out like porridge. Then add finely chopped mangoes, green chillies and a few curry leaves. Chill and serve for noon time. It is a very refreshing and cooling item which is very apt and welcomed by one and all.

Recipe: Egg Custard

Ingredients:

  • 6 eggs
  • 1/2 litre milk
  • 1/4 kg sugar
  • Cherries, dry fruits & grated chocolate for decoration.

Method:

Add eggs, milk & sugar in a steel vessel.
Take bigger vessel with 1/4 water, place it on the stove and then add the smaller steel vessel which contains the mixer of eggs, milk & sugar in it, then cover the vessel which is on the stove with a plate. The custard will get cooked by the steam inside.

Duration: 15 minutes

Remove the custard from the vessel and decorate it with cherry, chocolate & other dry fruits. It can also be frozen for 1/2 hour and then served chill.

Ingredients:

  • Large tomatoes - 6 
  • Green chilli - 1 deseeded
  • Coriander leaves - 1 cup
  • Garlic - 1 clove
  • Small onions - chopped 4
  • Lime juice - 1/2 cup
  • Chilli powder - 1/2 tsp
  • Jjeera powder – 1 tsp
  • Salt - To taste

Method:

1. Process all ingredients in the mixer until smooth.
2. Strain, chill and serve cold.
Makes 6 cups

Recipe: Mango Ice Cream

Ingredients:

  • Milk - 1/4+1cup
  • Milk powder – 2 tbsp
  • CMC powder - 3/4 tsp
  • GMS powder-1 tsp
  • Liquid glucose – 1 tbsp
  • Sugar – 1 tbsp
  • Condensed milk - 1 tin
  • Mango pulp - 3/4 cup
  • Fresh cream – 250 gms
  • Vanilla or mango essence - ¾ tsp.

Method:

1.Dissolve CMC & GMS with 1 cup of water. Cook on fire till completely dissolved, boiling down to half, and stain it.
2.Heat milk, add milk powder, sugar, liquid glucose, dissolved CMC and GMS
3.Remove from fire and cool.
4.Beat condensed milk and mango pulp in a mixer.
5.Add cooled milk mixture along with colour and essense.
6.Set in fridge. Take out, beat with cream and set back in the fridge.
It is ready to serve now.

Recipe: Green Mango drink

Ingredients:

  • Green mangoes - 2
  • Sugar - 1/2 a cup (you can either lessen or increase the amount according to taste)
  • Water - 3 cups
  • Roasted jeera powder - 1 tbsp
  • Pepper powder - 1/4 tsp
  • Black salt powder- 1/2 tsp

Method:

Pressure cook the mangoes with the water for about 7 minutes. Then remove the skin and strain the pulp. Mix the excess water in the cooker with the pulp. If you feel the consistency is too thick, then add some more water. Now stir in the sugar and the other masalas along with salt. Serve chilled.

Drink:
  • 1 cup of red watermelon pieces;
  • 2 pieces of cucumber;
  • 1 piece of ginger;
  • jeera powder 1 spoon;
  • salt and sugar as per taste;
  • a few pudina and coriander leaves;
  • drops of rosewater and lemon juice.
  • Crush the pieces of melon with cucumber and add sugar, salt and other ingredients and mix well and serve with lemon juice.

Food:

  • 1 cup of basmati rice and wash it and drain it.
  • Add gjhee in a kadai and add jeera and few pieces of white onion and fry. Later on, add rice and when half-boiled, add salt and lime juice and serve it with cucumber salad.

Moong delight:

  • Take green payaru and soak it for 6 hours and grind with green chillies and salt.
  • Take grated paneer, ginger paste with salt and mirchi, a little coconut and keep the fillings ready. Add oil in tawa and pour like dosa the moong paste and after some time turn it and add the paneer fillings and fold it and press it.
  • Serve it with green chutney.
