Here’s a simple version of the beetroot pasta recipe:
Ingredients
500g pasta
200g feta cheese
20g fresh dill, chopped
1 tbsp lemon juice
Extra olive oil for drizzling
For the sauce
600g cooked beetroot, drained
100ml olive oil
1 tsp salt
4 garlic cloves, chopped
1 large red chili (optional seeds)
Method
Cook the pasta according to the packet instructions.
While the pasta cooks, make the sauce: put beetroot, olive oil, salt, garlic, and chili in a blender. Blend until smooth.
Take half of the sauce and put it in a freezer bag for another meal.
In a bowl, crumble the feta cheese, add chopped dill, drizzle with lemon juice, and mix.
Pour in the beetroot sauce and stir well.
Serve on a plate and sprinkle the feta-dill mixture on top.
Drizzle a little extra olive oil before serving.
