Ingredients
1 tablespoon olive oil
500 grams chicken (cut into small cubes)
Salt and pepper (as needed)
1/2 cup onion (chopped)
2 garlic cloves (minced)
1 teaspoon Italian seasoning
1 tablespoon fresh parsley (chopped)
400 grams tomatoes (chopped)
3 cups chicken broth
1 cup heavy cream
350 grams penne pasta (raw)
2/3 cup mozzarella cheese
1/2 cup parmesan cheese
How to Make One Pot Chicken Pasta
Heat olive oil in a large pan. Add the diced chicken and cook until it loses its pink colour and moisture. Add salt and pepper to taste.
Add chopped onion and minced garlic. Cook until the onion becomes soft and slightly transparent.
Add Italian seasoning, parsley, chopped tomatoes, chicken broth, and cream. Mix everything well and bring it to a boil.
Add the raw penne pasta directly into the same pot. Let it cook in the broth. Stir occasionally so the pasta does not stick. If needed, add a little more broth until the pasta is fully cooked and soft.
Once the pasta is cooked, add mozzarella and parmesan cheese. Mix well until the cheese melts and becomes creamy.
