Crispy Konkani Fried Chicken Recipe for Monsoon

Konkani Fried Chicken is a delicious dish that combines the spicy flavors of Malvani masala with crispy, golden fried chicken. It makes a perfect snack or appetizer, especially on a rainy monsoon evening.

Ingredients:

Chicken strips

Malvani masala

Unsalted butter

Shallots, finely chopped

Garlic, minced

Eggs

Buttermilk

All-purpose flour

Seasoned bread crumbs

Salt

Cooking oil

How to Make Konkani Fried Chicken:

Prepare the aromatics: In a large skillet, melt unsalted butter over medium heat. Add chopped shallots and minced garlic, and cook for 2–3 minutes until softened and fragrant.

Marinate the chicken: Rub the chicken strips with Malvani masala and let them marinate in the refrigerator for 4–6 hours. This helps the chicken absorb all the spicy flavors.

Prepare the coating: In a small bowl, whisk together eggs and buttermilk.

Coat the chicken: Dip the marinated chicken strips first into the egg and buttermilk mixture, then roll them in the flour and bread crumb mixture until well coated.

Fry the chicken: Heat cooking oil in a skillet to 375°F (190°C). Carefully fry the chicken strips in batches until they turn golden brown and the juices run clear.

Drain and serve: Remove the fried chicken from the oil and place it on paper towels to drain excess oil. Serve hot as a snack or appetizer with your favorite dipping sauce.

Its crunchy exterior and flavorful interior make it perfect for sharing or enjoying with a cup of tea during the monsoon.
