A sweet and tangy twist on regular chicken gravy.
Ingredients:
500 g chicken
2 medium onions, finely chopped
Oil (as needed)
1 can diet Coke (300 ml)
1 cup tomato puree
2 tbsp vinegar
2 cups chicken stock
Red, yellow, and green peppers, chopped into bite-sized pieces
3 garlic cloves, chopped
Mixed herbs
Salt (to taste)
Black pepper (to taste)
Chopped coriander leaves (for garnish)
How to Make Diet Cola Chicken:
Prepare the chicken: Wash the chicken and season it with salt and black pepper. Heat some oil in a pan and cook the chicken for 6-7 minutes until it changes colour. Don’t cook it fully yet. Take it out and keep aside.
Cook the veggies: In the same pan, add a little oil and sauté the onions, peppers, and garlic for 4-5 minutes until soft. Remove them and keep aside.
Make the sauce: In the same pan, pour the diet Coke, tomato puree, and vinegar. Add mixed herbs and stir well.
Combine chicken and veggies: Add the semi-cooked chicken and sautéed veggies into the pan. Mix everything well so that the chicken and vegetables are coated with the sauce.
Cook: Cover the pan and cook on medium-high heat for 15 minutes. Cook until the sauce thickens, the veggies are soft, and the chicken is tender.
Finish and serve: Add salt and black pepper to taste. Garnish with chopped coriander leaves. Your Diet Cola Chicken is ready to serve!
