Easy Spicy Tomato Pasta for Weeknights

A spicy pasta all’arrabbiata is basically pasta with a hot tomato sauce.
It’s an easy dish you can make with ingredients from your kitchen cupboard,
perfect for a quick weeknight dinner.

Ingredients

6 tbsp extra-virgin olive oil
2 red chillies, finely sliced
2 garlic cloves, chopped
A handful of basil leaves
600g tinned chopped tomatoes
Salt and black pepper
400g penne pasta
Parmesan shavings (or any similar vegetarian hard cheese), for serving

Method

Heat the olive oil in a frying pan on low heat. Add the sliced chillies and chopped garlic.
After about a minute, add the basil leaves and let them soften in the oil.
Add the chopped tomatoes and stir well.
Turn up the heat and let the sauce cook for at least 10 minutes, or until it becomes thicker. Season with salt and pepper.
While the sauce cooks, boil the pasta in a large pot of salted water following the packet instructions until it is al dente (cooked but still firm).
Drain the pasta and mix it into the tomato sauce.
Serve hot with Parmesan shavings on top.
