Quick Sausage Pasta with Tomato Sauce
Ingredients:
1 tbsp olive oil
1 red pepper, seeds removed and chopped
400g (14oz) sausages, skins removed
350g (12¼oz) tomato and chilli pasta sauce
350g (12¼oz) penne pasta
Salt and freshly ground black pepper
Freshly grated Parmesan, to serve
1 tbsp chopped fresh basil (optional)
Method:
Heat olive oil in a big pan. Cook red pepper on medium heat until soft.
Add sausages and break into small pieces. Cook until brown.
Pour in the tomato sauce and let it cook for 10 minutes.
While the sauce cooks, boil the pasta in salted water following the packet instructions.
Serve in bowls and top with Parmesan and basil, if you like.
