This is my go-to pasta dinner because it’s quick, tasty, and everyone loves it. Perfect for a regular meal or a casual dinner party. The pasta is cooked in a creamy crème fraîche sauce and topped with crispy Parma ham for extra flavor and texture.
Ingredients:
350g (12oz) penne pasta
2 packs (80g each) Parma ham, cut into small pieces
250g (9oz) small brown chestnut mushrooms, cut in halves or quarters
200g (7oz) full-fat crème fraîche
100g (3½oz) grated Parmesan cheese
2 tbsp chopped fresh parsley
Salt and freshly ground black pepper, to taste

Crunchy bread
Method:
Drain and set aside.
Heat a frying pan. Add the Parma ham and fry until crispy. Remove half of the ham and set aside.
Add the mushrooms to the same pan and fry for 2 minutes.
Add the crème fraîche and bring it to a boil.
Add the cooked pasta, Parmesan, and parsley. Toss everything together over the heat. Season with salt and pepper.
Serve hot, with a green salad and crunchy bread if you like.
