Spicy and Delicious Sindhi Mutton Fry Recipe

This Sindhi Mutton Fry is a delicious dish made with tender mutton, raw papaya paste, and aromatic spices.

Ingredients:

500 g mutton pieces

2 tbsp raw papaya paste

4–5 tbsp oil

2 medium onions, grated

1 tbsp ginger and garlic paste

1 cup yogurt

2 tomatoes, pureed

2 tsp chopped coriander leaves

1 tbsp cumin seeds

1 tbsp coriander seed powder

1 1/2 tbsp garam masala powder

2 green chillies

1 tsp red chilli powder

2 green cardamom

Salt, to taste

How to Make Sindhi Mutton Fry:

Prepare the mutton: Wash the mutton pieces thoroughly. Apply the raw papaya paste to the mutton and leave it to marinate for 30 minutes.

Prepare spices: Grind whole spices like cardamom, cinnamon, cloves, and star anise into a fine powder for garam masala. (You can also use store-bought garam masala.)

Cook onions and paste: Heat oil in a large pan. Add the grated onions and sauté until golden. Then add ginger and garlic paste and cook until the raw smell disappears.

Fry the mutton: Add the marinated mutton to the pan and fry until the color changes slightly.

Add spices and yogurt: Mix the rest of the ingredients (yogurt, pureed tomatoes, cumin, coriander powder, red chilli, green chillies, and garam masala) in a bowl. Add this mixture to the mutton and fry until the oil separates and the mixture becomes dry.

Cook the mutton: Add 2 cups of warm water, cover the pan, and cook on low-medium heat until the mutton is tender and fully cooked.

Tips:

Marinating with raw papaya helps tenderize the mutton.

Adjust spices according to your taste.

Serve hot with roti, paratha, or steamed rice.
