If you love spicy and flavorful curries, this Kerala-style mutton curry is a perfect dish.
Ingredients
For the mutton:
350 grams mutton
1 tsp chopped ginger
1 tsp chopped garlic
½ tsp turmeric (haldi)
1 green chili, chopped
¼ cup shallots
8–10 curry leaves
Water, as needed
Salt, to taste
For the curry:
2–3 tbsp coconut oil
1 tsp red chili powder
¾ cup sliced onions
1 tsp grated ginger
3–4 garlic cloves, chopped
8–10 curry leaves
¼ cup tomatoes, chopped
1 tbsp fresh coconut, sliced
How to Make Kerala-Style Mutton Curry
Cook the mutton:
Add the mutton to a pressure cooker along with water, turmeric, curry leaves, ginger, garlic, shallots, green chili, and salt. Mix well and pressure cook for 15–20 minutes, or until the whistle goes off.
Prepare the curry base:
Add curry leaves and onions and sauté for 1–2 minutes. Then add the ginger and garlic and cook for another minute.
Add the spices and mutton:
Add fresh coconut, tomatoes, and red chili powder. Then mix in the cooked mutton along with its cooking water. Stir everything well.
Slow cook the curry:
Reduce the heat to low, cover the pan with a lid, and cook for 20–25 minutes, stirring occasionally. This allows the mutton to absorb the spices and become tender.
