Kerala-Style Mutton Curry Recipe

Ingredients
For Mutton Marinade:
1 kg mutton (bone-in preferred)
1 tsp turmeric powder
1 tsp red chili powder
1 tsp salt
2 tsp ginger-garlic paste
For Curry:
3 tbsp coconut oil
2 large onions, thinly sliced
2 green chilies, slit
2 tsp ginger-garlic paste
2 large tomatoes, chopped
1 tsp coriander powder
1 tsp cumin powder
1 tsp black pepper powder
1 tsp garam masala powder
1/2 tsp turmeric powder
1 cup thick coconut milk
1 cup water (adjust as needed)
Few curry leaves
Salt, to taste
Fresh coriander leaves, for garnish
Instructions
Marinate the Mutton
Mix the mutton with turmeric, red chili powder, salt, and ginger-garlic paste.
Keep aside for at least 30 minutes (or overnight for best results).
Fry Onions and Spices
Heat coconut oil in a heavy-bottomed pan.
Add sliced onions and sauté until golden brown.
Add green chilies, curry leaves, and ginger-garlic paste. Fry until raw smell disappears.
Cook Tomatoes and Masala
Add chopped tomatoes and cook until soft.
Mix in coriander powder, cumin powder, black pepper, turmeric, and garam masala. Cook until oil separates.
Add Mutton and Cook
Add the marinated mutton to the pan.
Sear the mutton for 5–10 minutes until lightly browned.
Simmer with Coconut Milk
Add water and bring to a boil.
Cover and simmer on low heat for 45–60 minutes, or until mutton is tender.
Stir occasionally and add more water if needed.
Finish Curry
Once the mutton is cooked, add thick coconut milk and simmer for 5–10 minutes on low flame.
Adjust salt and spice levels.
Garnish and Serve
Garnish with fresh coriander leaves.
Serve hot with steamed rice, parotta, or appam.
