Authentic Rajasthani Spicy Mutton Masala Recipe
This Rajasthani-style mutton masala is rich, spicy, and full of traditional desert spices. The tender mutton pieces absorb strong flavours from roasted spices, making it a perfect dish for special dinners. It tastes amazing with onion rings and mint chutney.
Ingredients
For the Mutton
500 g mutton (cleaned pieces)
2 tbsp mustard oil or cooking oil
2 onions (finely sliced)
2 tomatoes (chopped)
1 tbsp ginger-garlic paste
2 green chillies (slit)
Salt to taste
Spices
2 tsp red chilli powder
½ tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
½ tsp garam masala
1 tsp crushed black pepper
Whole Spices
1 bay leaf
2 cloves
1 small cinnamon stick
2 green cardamoms
Other Ingredients
½ cup curd (yogurt)
1 tbsp lemon juice
Fresh coriander leaves (for garnish)
Preparation
1. Marinate the Mutton
In a bowl mix:
Mutton pieces
Curd
Turmeric powder
Red chilli powder
Lemon juice
Salt
Mix well and let it marinate for 30–45 minutes.
2. Cook the Base Masala
Heat mustard oil in a pressure cooker or heavy pan.
Add whole spices:
Bay leaf
Cloves
Cinnamon
Cardamom
Let them release their aroma.
Add sliced onions and cook until golden brown.
3. Add Aromatics
Add:
Ginger-garlic paste
Green chillies
Cook for 1–2 minutes until the raw smell disappears.
Then add chopped tomatoes and cook until the mixture becomes soft and oily.
4. Add Spice Mix
Add:
Coriander powder
Cumin powder
Black pepper
Extra chilli powder if you like it spicy
Cook the masala for 2–3 minutes.
5. Cook the Mutton
Add the marinated mutton pieces into the pan.
Mix well so the meat is coated with the masala.
Add about 1 cup water, close the pressure cooker and cook for 4–5 whistles or until the mutton becomes tender.
6. Final Touch
Open the cooker and simmer for a few minutes until the gravy thickens.
Sprinkle garam masala and fresh coriander leaves.
