Easy One Pot Mexican Chicken Rice Recipe

Mexican Chicken Rice is a simple and tasty one-pot meal. It is easy to cook and perfect for anyone who loves chicken. The combination of chicken, rice, and spices makes it a flavorful dish that your whole family can enjoy.

Ingredients:

5–6 chicken pieces
1 cup chicken broth
½ cup rice
1 carrot (chopped)
1 onion (chopped)
1 capsicum (chopped)
5 garlic cloves
¼ cup cheese
1 cup salsa
½ teaspoon red chilli powder
½ teaspoon pepper
Salt (as needed)

How to make it:

First, heat a pan and add the chicken pieces. Cook them for a few minutes until they start to brown.

Next, pour in the chicken broth. Add the chopped vegetables like carrot, capsicum, and any other vegetables you like, along with the salsa. Add red chilli powder, salt, and pepper. Mix everything well and let it come to a boil.

In another pan, heat a little oil and add chopped onions and garlic. Sauté them until they become soft and slightly golden. Then add the rice and roast it lightly for a few minutes.

Now, add this roasted rice into the pan with the chicken and broth. Mix everything well. Cover and let it cook until the rice becomes soft and absorbs all the flavors.

Once the rice is fully cooked, sprinkle cheese on top. Let it melt slightly, then serve hot and enjoy your delicious Mexican Chicken Rice.
