Fiery Laal Maas Mutton Curry at Home

Laal Maas is a traditional Rajasthani dish known for its fiery flavor and rich aroma. Made with tender mutton cooked in a spicy red chili-based gravy, this dish is a must-try for spice lovers.

Here’s a simple recipe you can try at home to enjoy the authentic taste of Rajasthani cuisine.

Ingredients:

500 g mutton, cut into pieces

4-5 tbsp mustard oil

2 large onions, finely sliced

2 tsp ginger-garlic paste

6-8 dried red chilies, soaked and ground into a paste

1 tsp turmeric powder

1 tsp coriander powder

1 tsp cumin powder

Salt to taste

1 cup yogurt, beaten

Fresh coriander leaves for garnish

How to Make Laal Maas:

Let it sit for 30 minutes.

Fry onions – Heat mustard oil in a pan and fry the onions until golden brown.

Add paste – Add ginger-garlic paste and red chili paste. Sauté until the raw smell disappears.

Cook mutton – Add the marinated mutton and cook for 5-7 minutes on high heat.

Simmer – Add water, cover, and cook on low heat until the mutton is tender.

Serve hot with steamed rice, roti, or bajra rotis for an authentic Rajasthani meal.
