Garlic-Spiced Roast Leg of Lamb
Ingredients
1 whole leg of lamb (2–2.5 kg)
8–10 garlic cloves (cut into halves)
3 tbsp olive oil
2 tbsp lemon juice
2 tbsp curd (yogurt) (optional, for tenderness)
1 tbsp ginger-garlic paste
1 tbsp red chilli powder
1 tsp turmeric powder
1 tbsp garam masala
1 tbsp coriander powder
1 tsp cumin powder
1 tbsp black pepper (crushed)
Salt (as needed)
Fresh rosemary or coriander leaves (optional)
Preparation
Clean the lamb and pat it dry.
Make deep cuts (slits) all over the meat using a knife.
Insert garlic pieces into each slit.
Marination
In a bowl, mix:
Olive oil
Lemon juice
Curd
Ginger-garlic paste
All spices + salt
Apply this mixture all over the lamb, making sure it goes inside the cuts.
Cover and marinate for at least 6–8 hours (overnight is best).
Cooking (Oven Method)
Preheat oven to 180°C.
Place the lamb on a baking tray (or foil-lined tray).
Cover with foil and cook for 1.5 to 2 hours.
Remove foil and roast for another 30–40 minutes until:
The outside is browned
The meat is soft and cooked through
Let it rest for 10–15 minutes before cutting
Serve with:
Roasted vegetables
Mint chutney or gravy
Rice or bread
