Quick and Refreshing Prawn Litchi Salad
This prawn and litchi salad is very easy and quick to make. It’s perfect for days when you want a light, refreshing meal without much effort.
Ingredients:
500 g prawns (shelled and cleaned)
2 tbsp spring onions, chopped
1 mango, finely chopped
500 g litchis (deseeded)
1 tsp chili flakes
Juice of ½ lemon
1 tbsp olive oil
Handful of peanuts (for garnish)
Salt to taste
How to Make Prawn and Litchi Salad:
Prepare the marinade: Mix olive oil, lemon juice, chopped spring onions, and chili flakes. Marinate the prawns in this mixture for 15 minutes.
Cook the prawns: Heat a pan (kadhai) on high. Add the prawns with the marinade and stir-fry for 2–3 minutes until the prawns are fully cooked.
Mix the salad: In a bowl, combine the cooked prawns with chopped mango and litchis. Add peanuts for crunch, season with salt, and serve immediately.
This salad is fresh, tangy, and slightly spicy, making it a perfect light meal or appetizer.
