Almond & Amaranth Ladoos for Ganesh Chaturthi
🌰 Almond & Amaranth Ladoos
Ingredients
- Amaranth (rajgira) flour – 1 cup
- Almonds – ½ cup, finely chopped or powdered
- Jaggery – ¾ cup, grated
- Ghee – 3–4 tbsp
- Cardamom powder – ½ tsp
- Milk – 1–2 tbsp, only if needed
- Chopped cashews – 2 tbsp (optional)
- Raisins – 1 tbsp (optional)
👩🍳 Method
1. Roast the almonds
Heat a pan on low flame. Add the chopped or powdered almonds and roast for 2–3 minutes. Keep stirring so they do not burn. Remove and keep aside.
2. Roast the amaranth flour
In the same pan, add the amaranth flour. Dry roast it on a low flame for about 4–5 minutes, stirring continuously. The flour should become slightly aromatic. Do not let it turn dark.
3. Add ghee
Add 2–3 tablespoons of ghee to the roasted flour and mix well. Cook for another 1–2 minutes on low heat.
4. Add almonds and nuts
Add the roasted almonds, cashews and raisins. Mix everything together.
5. Add jaggery
Turn off the flame and allow the mixture to cool slightly. Add the grated jaggery and cardamom powder. Mix thoroughly.
6. Make the ladoos
Add a little ghee if the mixture feels dry. Take a small portion in your hand and press it firmly, then roll it into a round ladoo.
If the mixture is not holding together, add 1–2 teaspoons of warm milk or a little more melted ghee.
7. Cool and serve
Allow the ladoos to cool completely before serving. Store them in an airtight container.

🍬 Tips
- Always roast amaranth flour on low heat to prevent burning.
- Add jaggery only after slightly cooling the mixture.
- For a richer taste, add a little extra ghee.
- You can add dry coconut powder or sesame seeds for extra flavour.
- For a firmer ladoo, use less milk and allow them to cool completely.
These ladoos are a tasty combination of almonds, amaranth and jaggery, making them a nice homemade sweet for Ganesh Chaturthi.
