Kashmiri Rogan Josh: Rich Spicy Mutton Curry
This is a rich and tasty mutton curry from Kashmir. It is full of spices, cooked with curd, and perfect for dinner. You can serve it with onion rings and mint chutney.
Ingredients
1 kg mutton
1 cup mustard oil or cooking oil
3 tsp red chilli powder
3 tsp fennel powder
2 tsp ginger powder
2 tsp cumin powder
3 tsp brown cardamom powder
1 tsp asafoetida (hing)
4 green cardamom
2 cinnamon sticks
2 bay leaves
2 cloves
A pinch of saffron (optional)
1 cup curd (yogurt)
Salt to taste
👩🍳 How to Make
Wash the mutton well and keep it ready.
Heat oil in a pressure cooker.
Add cinnamon, bay leaves, green cardamom, cloves, asafoetida, salt, and mutton.
Fry the meat until it turns brown.
Add 1 cup of water and mix well.
Add red chilli powder and saffron. Stir for a minute.
Blend the curd smoothly and add it to the cooker.
Keep stirring until the gravy gets a nice red color.
Add 2 cups of water, fennel powder, and ginger powder.
Close the cooker and cook for a few minutes until the meat becomes soft.
Check if the meat is tender.
Grind green and brown cardamom and add it to the curry.
Finally, add cumin powder and cook for one more minute.
Serving
